Breakfast Tofu Scramble



INGREDIENTS

  • 8 ounces extra-firm tofu

  • 1-2 Tbsp olive oil

  • 1/4 red onion (chopped)

  • 1/2 red , yellow orange pepper (chopped)

  • 1/2 bella mushrooms (sliced)

  • 2 cups spinach

  • 1/2 tsp sea salt

  • 1/2 tsp garlic powder

  • 1/2 tsp ground cumin

  • 1/4 tsp chili powder

  • 1/4 tsp turmeric

DIRECTIONS

  • Pat tofu dry and roll in a clean, absorbent towel with something heavy on top, such as a cast-iron skillet, for 15 minutes.

  • While tofu is draining, prepare sauce by adding dry spices to a small bowl and adding enough water to make a pourable sauce. Set aside.

  • Prep veggies and warm a large skillet over medium heat. Once hot, add olive oil and the onion, peppers, and mushrooms. Season with alt and pepper and stir. Cook until softened – about 5 minutes.

  • Add spinach, season with a bit more salt and pepper, and cover to steam for 2 minutes.

  • In the meantime, unwrap tofu and crumbles into pieces in your skillet full of veggies.

  • Use a spatula to move the veggies to one side of the pan and add tofu. Sauté for 2 minutes, then all seasonings, pouring it mostly over the tofu and a little over the veggies. Stir immediately, evenly distributing the seasoning. Cook for another 5-7 minutes until tofu is slightly browned. *(turmeric is what gives the tofu the rich egg color).

  • Plate and enjoy!


BUFFALO CAULIFLOWER WINGS by Kara


Ingredients for Batter

1 can Coconut milk

1 cup flour

*optional 1 egg (not vegan)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon pepper

1 teaspoon salt

1 teaspoon paprika

1 teaspoon Adobo

1 Cauliflower (chopped into baby trees )

ngredients for Buffalo Sauce

French’s Red hot

Plant Based Butter


Mix all the ingredients for batter in a bowl and coat each piece of cauliflower.


Cook in Air Fryer for 15-20 minutes (rotate midway through)


Toss in Buffalo Sauce


Place "wings" back in Air Fryer for 3-5 minutes


*Dipping Sauce of your choice

-Option to add other veggies like carrots and peppers
